Year-round production from Ica, La Libertad, and Ancash makes Peru one of the few origins able to supply asparagus without seasonal interruption. Green asparagus is graded by diameter in Standard, Large, and Jumbo formats with tight, uniform tips. White asparagus is thicker, sweeter, and especially relevant for Germany, France, and Spain.
