Commercial overview

Peru produces two of the world's rarest cacao varieties. Chuncho, native to the Cusco valleys, delivers citrus and nut notes with high cocoa butter content and fermentation above 75%. Blanco de Piura is a white bean mutation with near-zero bitterness sought by elite European chocolatiers. Cadmium levels are monitored for EU compliance, and supply is available as fermented whole beans, nibs, cacao butter, and cacao liquor.
